Flour in oil: As the flour mixes in, it toasts slightly and bonds with the chicken skin, making a crunchy, golden crust.
Seasoning + oil: Mixing olive oil into the seasoning before frying helps the spices stick, while keeping the meat juicy inside.
Lemon juice: Not only adds flavor, but the acidity lightly tenderizes the chicken.
⚠️ Things to Keep in Mind
Safety first: Adding flour to hot oil can clump or splatter if not stirred in gradually. Make sure the oil isn’t too hot when adding it.
Oil longevity: Flour in the oil can shorten the oil’s frying life since particles may burn at the bottom of the pan. If you’re frying multiple batches, you might need to strain or replace the oil.
Even coating: Stir thoroughly to prevent flour lumps; otherwise, you’ll get uneven crispiness.

INGREDIENTS
12oz sirloin steak
30g unsalted butter
2 garlic cloves
3 sprigs of rosemary
Salt
Black pepper
METHOD
1. Rest the steak at room temperature after seasoning (approx 30-45mins)
2. Pat dry with a paper towel
3. Season with salt and black pepper
4. Rub in well
5. Oil in a cast-iron skillet on a medium-high heat
6. Crush and peel the garlic cloves
7. Cook the 12oz steak for 6 minutes, turning over every 1 minute 30 seconds
(Use a cooking thermometer if required - Medium cooked = 140F/60C)
8. Add butter, garlic and rosemary for the remaining 2 minutes
9. Baste the steak with the melted butter
10. Sear the fat
11. Leave to rest for 5 minutes
12. Season with salt and black pepper

If you've never made Hot Water Cornbread, you don't know what you're missing. You've got to try, they are so easy to make! This is great with beans, greens, soup and just with butter! Try them out!
1 Cup Yellow Cornmeal
1/4 Cup Flour
1 Tsp
of Salt
Boiling Hot Water
1/2 Cup Canola /Vegetable Oil (or enough to fill the bottom of your skillet)
Mix first three ingredients in a bowl, add boiling water to cornmeal mixture and pour enough water to make the consistency thin enough to make patty or drop from spoon into grease. Fry in both sides until done and crispy. Enjoy with beans, greens, soup or whatever else you’d like.

Just boiling water with flour. Simple and delicious you can make this everyday. No yeast No oven
Ingredients and recipe:
250ml water
1/2tsp salt
Medium-high heat
300g All purpose flour
Stir well
Set aside to let cool
Knead the dough together
Cover and rest for 20 minutes
20 minutes later
Sprinkle some flour
Flatten the dough
Divide into 16 parts
Take a piece of dough and shape it into a ball
Then flatten the dough until the diameter is about 10cm
Vegetable oil
Fry for 30-45 seconds
Flip over and fry for another 30-45 seconds
Last one
Repeat
So crisp and delicious!
